when my mom was here the other week we bought some really good strawberries that were a killer deal. she said she thought they would make really great jam. once again, teresa, brilliant idea! last monday night torrey and i made strawberry freezer jam. it wasn't hard at all and it was a lot of fun. we made 15 jars of the spreadable goodness and actually, i wish we had more! maybe another jam session soon torr?
i am thinking peach and raspberry next, maybe a strawberry/peach combo???
here's the recipe we used:
FREEZER JAM:
4 cups mashed fruit (we did 10 cups...2 1/2 times the recipe, in 3 batches)
1/2 to 2 cups sugar, as you like (we did 1 1/2 cups each batch- it's so sweet and good!)
1/2 cup non-cook pectin
combine fruit and sugar. add pectin gradually. let stand 10 minutes.then stir until smooth. add more pectin if necessary. (we just did the 1/2 cup each batch)
for extra clarity either add 1 cup white grape juice or apple juice concentrate and 2-3 table spoon of pectin to each batch. or add 1/2 cup of light corn syrup. (we ignored this)
mild fruits may need 2 table spoons lemon juice. (and this)
